gotta eat, babes 😋 chicken fried chicken 2 chicken breasts buttermilk (enough to cover) hot sauce 3 cups all purpose flour 1/2 cup cornstarch black pepper salt cajun seasoning canola oil, for drying 1. butterfly the chicken breasts. season with whatever makes ya little heart happy! (i used cajun seasoning!) 2. cover with buttermilk & add a little hot sauce. let marinate in the icebox (fridge) for AT LEAST an hour! 3. in a bowl, combine the flour & cornstarch. season well. remove the chicken from the buttermilk, coat with the flour, once more to the buttermilk and again in the flour. place on a wire rack & let rest at room temp for about a half hour. 4. heat the oil until sizzling & fry the chicken, one at a time, on both sides until golden brown and 165°F internal temp. drain on a wire rack. milk gravy 1/4 cup bacon grease 2 tbs all purpose flour 2 cups milk black pepper salt 1. in a small pot, combine the bacon grease and flour. cook on medium low for about 5 minutes, stirring often. slowly whisk in the milk. season well & simmer til it thickens slightly. #louisiana #foodtiktok #recipes #chickenfriedchicken #supper #Foodie #supper

laissez les bons temps rouler💜💚💛 we let the good times roll over to my house after the parade for some crawfish étouffée 🦞 (see what i did there?😌) full recipe for crawfish étouffée: 1/4 cup vegetable oil 4 cups shrimp and/or crawfish shells 1 stick butter 2 celery stalks-diced 1 green bell pepper-diced 1 red bell pepper-diced 1 yellow onion-diced a ton of garlic-minced 2/3 cup vegetable oil 2/3 cup all purpose flour 2-3 lbs crawfish tails 3 ish cups stock (from step 1 or store bought) cajun seasoning garlic powder onion powder black pepper salt 1. In a deep skillet, heat the 1/4 cup of oil and all the shells. Sauté on medium heat for about 7 minutes. Cover with water and bring to a boil. 2. Lower heat and simmer while you do everything else. 3. In another pot on medium heat, melt the butter and saute the onion, peppers, & celery for about 35 minutes. Add in the garlic and saute for another 3. Remove. 4. Pour in the vegetable oil & flour, combine well and cook on medium low heat for about 20-30 minutes- until you get a medium brown/caramel colored roux. 5. Strain the shells from your stock. Stir in the cooked veggies & crawfish tails to the finished roux. Stir in the stock, while it's hot, into the pot-about 1 cup at a time. 6. Place back on stove and simmer until thickened, about 5 minutes. full recipe for “creamed” corn: 3 cans of corn, drained salt black pepper butter 8oz cream cheese 1. In a small pot, heat up the corn (drained), butter, salt & pepper. craving? satisfied 🍔 Burger Bowls 2 1/2 lbs ground beef cajun seasoning 3 tbs avocado oil iceberg lettuce cherry tomatoes purple onion cheddar cheese pickles 1 package bacon 1. Pour the oil into a pot and let it get hot. Once hot, add in the ground beef, season with cajun seasoning and cook on medium heat until fully browned. Drain & set aside. 2. While that cooks, you can prep everything else! Place the bacon on a wire rack lined baking sheet & into a cold oven. turn to 400°F & bake til crispy! 3. wash all the veggies! slice the lettuce, halve the tomatoes, shred the cheese, & finely dice the onion. 4. assemble in a bowl & serve! Burger Sauce: 1 cup mayo 1/4 cup ketchup 1 tbs creole mustard 3 tbs sweet relish salt black pepper garlic powder onion powder hot sauce to taste 1. combine everything in a bowl & season to taste! use immediately or (my preference) put it in the ice box (fridge) for about a half hour before! Shoestring Fries 2 lbs russet potatoes ice water vegetable oil, for frying salt 1. Either peel or don’t peel the potatoes (to each their own!) Using a mandolin on setting 4- slice them lengthwise into thinner slices. 2. make stacks of about 3-4 and using a sharp knife- slice the stack lengthwise into fries! Rinse them off with cold water & place into an ice bath for about 30 minutes. 3. Meanwhile, put some oil to getting hot (preheat to about 350°F). Then, drain the fries from the water & pat dry. 4. Fry them, in batches & stirring often- until browned about 3-5 minutes. drain on a wire rack & repeat. here, melissa, damn😤 (iykyk) skillet lasagna 2-3 tbs avocado oil 2 lb lean ground beef 1 small yellow onion, very finely minced minced garlic, prolly a lot 6 oz can tomato paste 28 oz can crushed tomatoes 3-4 cups water spoonful veggie bouillon dried basil, to taste (like 2-3 teaspoons) oregano (same as basil) 1 spoonful white sugar (like a tablespoon-ish) 16 oz lasagna noodles, broken up 32 oz ricotta (whole milk) 8oz block mozzarella (freshly shredded) 1 cup shredded parmesan (freshly shredded) black pepper cajun seasoning salt 2 tbs fresh parsley, chopped up tee tiny (real small) 1. in a deep skillet, heat the oil til sizzling. add in the meat and finely minced onion and season with whatever makes ya little heart happy 😉 (i use cajun seasoning usually). Let it cook on medium heat til its browned & onions are soft. Drain if necessary. Add in the garlic and tomato paste, cook on medium high, stirring often, about 5 minutes. Add in the tomatoes, water, bouillon, sugar, basil, oregano. season to taste (salt, pepper, etc). On medium-low, simmer about a half hour. 2. add in the broken up noodles and cook til they’re soft. 3. bad mood turned into steaks & a concert. works for me😂😜 RECIPES: steaks 2 ribeyes salt black pepper avocado oil or beef tallow 1. season the steaks all over with salt and pepper. let rest until they come to room temp. 2. heat the fat in a cast iron skillet on high until sizzling. 3. sear the steaks, on each side, until cooked how you like them. Use a meat thermometer to check the internal temperature. Aim for 130°F (54°C) for medium-rare, 135°F (57°C) for medium-rare, and 145°F (63°C) for medium. *let rest for 10 minutes before slicing* roasted potatoes 1/2 lbs fingerling potatoes 1/4 cup avocado oil pinch of cayenne pepper cajun seasoning, to taste minced garlic, prolly a lot 1. cut the potatoes in half and wash them off really well. pat dry. 2. in a bowl, combine the oil & season with whatever makes ya little heart happy! 3. toss the potatoes with the oil & seasonings, place cut side down on a baking sheet. 4. pop into an oven preheated to 400°F & bake for about 30 minutes, or until fork tender. brussels sprouts 1lbs brussels sprouts 1/2 lbs bacon 3 tbs butter salt black pepper red pepper flakes 1. lay the bacon in a skillet and cook on medium-ish heat until crispy. 2. wash the brussels and trim if necessary, slice in half. toss with whatever seasonings you want! 3. remove the bacon from the skillet & set aside. leave the bacon grease! 4. melt the butter. add the sprouts in, cut side down. cover and cook on medium heat for 7-10 minutes! #louisiana #foodtiktok #recipes #Foodie #kitchen #vibes #personalconcert
