Save this ONE PAN TACO CASSEROLE 🥑🌮💃🏻 (weeknight dinner idea!!) ingredients: 1 packet taco seasoning (I use siete) 2 cups water 1 15oz jar salsa 1 cup white rice 1 can black beans, drained and rinsed 1 cup fresh corn 1 red bell pepper, diced Toppings: jarred jalapeño, vegan sour cream, cilantro, pickled onions, avocado How to: 1. Preheat oven to 400 F. 2. In a casserole dish, add the taco seasoning, water and salsa and whisk. 3. Then, add the rice, beans, corn and pepper. Mix together until combined. 4. Bake uncovered for 30-40 minutes until the liquid is absorbed and rice is cooked! 5. Top with any of your favorite taco toppings from sour cream, to avocado! 6. Serve and enjoy! Cook homemade meals, send them uber eats gift cards if you're remote, go grocery shopping for them, offer to clean bottles and pump parts, offer to help with laundry, dishes, babysitting, etc. What I made: - lentil bolognese: onion, garlic, zucchini sauteed in olive oil, add cooked lentils and marinara sauce. ONE PAN TUSCAN PASTA (healthy dinner idea!)🍝🌿 You need: Sauce on the bottom: 2 tbsp olive oil 6 cloves minced garlic 3/4 cup full fat unsweetened coconut milk or coconut cream 1/4 cup nutritional yeast 1 tsp dried basil 1 tsp dried oregano 1 tsp salt *add all of this to a pan and whisk The rest: 8 oz small short pasta I use protein pasta 1.5 cups chopped broccoli 1/2 cup chopped sun-dried tomatoes 1 cup sliced baby Bella mushrooms 2 cups chopped spinach 4 cups water *mix it all together well Bake covered for 20 minutes and uncovered for 20 minutes at 400 F. This “get well” noodle soup is so healing. Its my go-to every winter. You need: 2 tbsp olive oil 1/2 yellow onion, diced 2 large carrots, diced 2 stalks celery diced 2 cans chickpeas, rinsed and drained 1/4 cup fresh dill 1/2 cup fresh parsley, chopped 2 cartons veggie broth 1 tsp salt 1 tsp turmeric 1 tsp thyme Pinch pepper Make soup noodles separately! Use any kind im using vegan egg noodles In a large soup pot, saute onion, carrot, celery for 7-10 min then add chickpeas. Add the rest of the ingredients besides noodles. Make noodles separately!
