My best friend just gave birth…this is what I brought her for dinner! She loved it so much and was so grateful 🥰🩷 HEALTHY PEANUT NOODLE STIR FRY 🍜🥦 The recipe: 1. Chop and prep veggies. I use bell peppers, snap peas, purple cabbage, green onions, and cilantro. Feel free to add in edamame, tofu, mushrooms, zucchini, carrots, etc. These are just the kinds of veggies my friend and her husband like. 2. boil noodles (I used about 12 oz) any kind ya like! And saute the veg at the same time. 3. Make the peanut sauce. 4. When the noodles are done, strain then add into the veggies and then add in the sauce and stir until combined on low heat then serve with cilantro and sesame seeds! Peanut dressing: (just whisk together) - 1/4 cup rice vinegar - 1/3 cup peanut butter - 3 tosp soy sauce or coconut aminos - 1 tosp sriracha - 1 tosp mirin - 1 tosp toasted sesame oil - Garlic + ginger
